Abstract: In this article the author attempts to trace trace the changes of attitude, preserved in the language, as referring to a narrow sphere, that is the culinary art. Subjected to analysis are the recipes from 365 dinners by Lucyna Cwierczakiewiczowa, published in 1911 and those from the Polish Cookbook by S. Berger and others, published in 1972. From the semantic point of view the recipse contained in L. Cwierczakiewiczowa’s book may be dexcribed persuasive essays. In these writings the persuasive function dominates and it fulfils the illocutionary act of advice, recommendations, self confirming in the modal framework: X advises, suggests that Y should do. The attitude of the author of a text with language constructs of this type expresses itself in explicit and implicit ferms.
